Why is Indian food so bland?

Indian food is considered bland by many because of its reliance on simple ingredients, lack of spices, and its limited use of fats and oils. Many of the spices that are used in Indian food are mild, as are the flavours of the vegetables that are used. The traditional cooking methods also don’t involve the use of fatty cuts of meat or overly salty sauces, resulting in a milder overall taste.
